Elijah was flipping through my foodie calendar early in January and happened to notice that January 20th was Cheese Lover's Day. This boy loves cheese more than he loves a giant bag filled with Halloween candy, so he requested a cheesecake for this special day...along with cheese sticks, cottage cheese, a grilled cheese sandwich and milk.
When I asked the boys what kind of cheesecake I should make, Sammy blurted out, "BANANA!" while Elijah said, "CARAMEL!" So there you go. Introducing a super yummy boy-inspired banana caramel cheesecake on this bitterly cold Valentine's Day! This cheesecake was a huge hit with my crew. The banana flavor in this sweet dessert is irresistible!

Ingredients

Graham Cracker Crust
  •     12 graham crackers (about 1 2/3 cups of graham cracker crumbs)
  •     1/2 cup granulated sugar
  •     1/4 cup butter, melted
Cheesecake Layer
  •     16 oz cream cheese, softened (two 8-oz blocks)
  •     1 tsp vanilla extract
  •     4 eggs, beaten
  •     1 cup granulated sugar
Banana Cream Pudding Layer
  •     2 3/4 cup milk
  •     1 cup cool whip
  •     2 3.4 oz packages instant banana pudding
Cheesecake Topping
  •     3 cups cool whip
  •     2 bananas (sliced)
  •     1/4 cup roughly chopped graham crackers

Instructions

Graham Cracker Crust
  1. Crush the graham crackers. Stir in the granulated sugar and the melted butter. Press into 9x13 inch pan. Set aside.
Cheesecake Layer
  1. Beat the cream cheese until smooth. Add the beaten eggs, sugar, and vanilla. Mix until smooth, scraping the sides of the bowl as needed.
  2. Pour the cream cheese mixture over crust and bake at 375˚F for 20-25 minutes, or until done (top is dry to touch).
  3. Cool completely.
Banana Cream Pudding Layer
  1.  Beat two package of instant banana cream pudding with the milk. Stir in the cool whip. Spread over the cooled cheesecake layer.
Cheesecake Topping
  1. Top the cheesecake with cool whip, roughly chopped graham crackers and banana slices.
  2. Store in the fridge until ready to serve.
