Next week we’re forecasted to have our hottest day so far this summer with temperatures topping out at 91 degrees. I’m from the south but I won’t argue that those temperatures are scorching and even though the heat index isn’t in the triple digits like it would be back home this time of year, we live in a house without air conditioning.
It’s brutal when it’s just as hot inside as it is outside.
To keep from melting we have a fan running constantly in the living room and a window fan that draws out the hot air in the kitchen. This barely helps to keep it from turning into a sauna while we cook and bake both for ourselves and for our blogs.
Just to give you an idea of how hot it is our coconut oil {which is normally solid at room temperature} is currently in its liquid form. And has been that way for days weeks.
So the thought of turning on the oven to make another recipe for y’all had me cringing and sweating just thinking about it. So I thought hard to figure out a way to bring my current obsession with limes and cute single serving desserts together without having to turn on the oven. And the results were amazing.
Today I’m bringing you a fantastic no bake dessert with just…wait for it…five ingredients.
The great thing about this set up is that you can choose to build this in any glass you want! Think mason jars, wine glasses, directly out of the bowl with a spoon. Wait, what?
However you choose to enjoy this fabulous, tart, no bake deliciousness is entirely up to you! And if you want to hide it in the back of the fridge and not let anybody else enjoy the splendor I won’t judge. You can even stand in front of the fridge while you eat them. You know, to avoid the pit stains.

Key Lime Pie Dessert Shooters

Ingredients
- 4 ounces 1/3 less fat cream cheese neufatchel cheese
- 15 graham crackers pulsed into crumbs
- 3 limes zest and juice set aside
- 14 ounces sweetened condensed milk
- whipped cream for topping
Instructions
- Using a stand mixer or electric mixer, combine cream cheese and condensed milk until well mixed. Add lime juice and half the lime zest; mix to combine.
- Transfer to bowl and refrigerate for at least 2 hours, up to overnight.
- Using your shooter glasses, layer dip/graham crackers, until you reach the top. Add whipped cream, and lime zest. Garnish with lime wedge if desired. Repeat with all shooter glasses.
- Refrigerate until serving, up to 6 hours before serving
