I’ll preface this by saying that although my name is indeed Valentina, my birthday is not on Valentine’s day. Sorry to disappoint To make it up to you, I’ve made some small batch Strawberry Milkshake Cupcakes today! Okay, so technically it’s more of a strawberry milk cupcake recipe, but I felt like calling them strawberry milk flavored sounded weird so… milkshake it is. Have to keep up my aesthetic, ya know  These little babies are so simple and fast to whip up, and they taste just like a rich and creamy glass of strawberry milk(shake). They’re perfect for your Valentine!
I decided to make these sweet little cupcakes as a small batch recipe because honestly small batches are just my favorite! Having only a few of a dessert works out in my favor both on a diet standpoint {cause there’s less dessert to eat} and on a blogger standpoint, because if I make something in a small amount, it gets eaten faster which means I can whip up something new sooner. It’s a win-win, basically! I have my classic Small Batch Recipes post with cupcakes, cheesecakes, and Swiss Meringue buttercream, as well as these adorable Chocolate-Covered Strawberry Cupcakes for two that I whipped up a couple of Valentine’s ago. I figured it was high time to add another small batch recipe to my repertoire!

What could be more a more perfect treat than a recipe that makes just 6 strawberry milkshake cupcakes? These babies are packed with tons of creamy strawberry milkshake-y flavor, and the secret ingredient is strawberry milk powder! I didn’t use a box-mix of strawberry cake, but I think the milk powder may just have to become my new secret weapon for all things strawberry flavored. It imparts a perfectly sweet berry flavor without the wet spots and soggy texture that can often accompany the use of actual strawberries in recipes. Don’t get me wrong, I absolutely looooove fresh fruit in my desserts, but sometimes they’re just not what you need for a particular recipe.

Ingredients

Cupcakes:
  • 1 Box White Cake Mix
  • 1/2 cup Sour Cream
  • 4 Egg Whites
  • 4 tbsp Malt Powder
  • ¼ tsp Sea Salt
  • 1 tbsp Vanilla Extract
  • 1 cup Milk
Frosting:
  • 2 cups Heavy Cream
  • 3 tbsp Strawberry Milk Powder
  • 1/3 cup Strawberries and Creme Instant Pudding Mix dry
  • Sprinkles
  • 1/2 cup Confectioners' Sugar

Instructions

Cupcakes:
  1. Preheat oven to 375 F.
  2. Line cupcake pan with liners.
  3. Beat all ingredients together until smooth.
  4. Fill each liner with about 1/4 cup of batter.
  5. Turn oven down to 350 F.
  6. Bake cupcakes for 18 – 20 minutes.
  7. Test with a toothpick to check that they are done, transfer cupcakes to a cooling rack.
Frosting:
  1. Combine all ingredients in a stand mixer or large bowl and whip until frosting stands stiff, about 2-3 minutes. DO NOT OVER MIX.
  2. Pipe onto cooled cupcakes, top with sprinkles and enjoy.
  3. Paper straws are optional but should be cut in half before adding.
