I have never been a huge fan or pork chops in the past. Honestly I just think I have always over cooked my pork chops which left then dry and blah! Making sure you cook them to 140 degrees ensures that they are tender and juicy.

Searing the pork chops in a hot skillet first (I use a cast iron pan), not only gives it that fantastic caramelization, but adds to the savory flavor.

With just a few pantry ingredients dinner will be on the table in 30 minutes. This is sure to be a new family favorite.

Garlic Brown Sugar Pork Chops

Ingredients

Brine
  •     3 tbsp Kosher or Himalayan Salt
  •     3 cups water
  •     garlic, balsamic vinegar, lemon optional
Pork Chops
  •     2 pork chops - on a bone; about 1 inch thick
  •     4 cloves garlic - chopped
  •     1/4 cup brown sugar - light
  •     2 tbsp oil - cooking oil or ghee
  •     1/2 teaspoon thyme - dried
  •     1/2 teaspoon oregano - dried
  •     2 tbsp butter
  •     pepper
  •     salt

Instructions

Brine
  1. To brine the pork chops dissolve salt in warm water, cool off to room temperature and submerge the pork chops (make sure all meat is covered with brine; you can either use a bowl or ziplock bag)
  2. Brine the pork chops in a refrigerator for at least 1/2 hour. The longer the better.
Pork Chops
  1. Preheat the oven to 400 degrees F;
  2. In the oven proof skillet heat up oil or ghee;
  3. Pat dry the the pork chops and season with salt and pepper on each side;
  4. Sear the chops on each side for about 3 minutes and then take them out;
  5. Remove the skillet from the heat, and add butter, brown sugar, chopped garlic and herbs. Mix it all together;
  6. Return chops to the skillet and smother them with the sauce on each side.
  7. Transfer the skillet to the oven and roast the pork chops until cooked through (140F to 145F) for about 6 to 8 minutes depending on the thickness of the meat;
  8. Once cooked remove the pork chops from the skillet and let rest for 5 minutes;
  9. Spoon the sauce on the pork and enjoy.
