Their dense, fudgy, chewy texture is just how I want my chocolate. With Valentine’s Day in sight, I decided to add some color to my brownies and topped them with fresh strawberries.
When I think of romantic Valentine’s Day foods, chocolate-covered strawberries instantly come to mind. They’re fresh and sweet, but not too indulgent, but put them on brownies and you are in for a decadent dessert.

How to make chocolate covered strawberry brownies

Start with my fudgy chocolate brownies recipe and let them cool completely. Top the cooled brownies with freshly cut strawberries and melted chocolate or chocolate ganache. Yes, it’s that simple!

You could even used a boxed brownie mix if you’re in a rush, however, I’m always a fan of homemade brownies. They turn out fudgier and more decadent in my opinion.

Ingredients 

Brownies:
  •     4 oz butter
  •     3 eggs
  •     ¾ cup sugar
  •     8 oz semi sweet chocolate chips
  •     ¼ teaspoon salt
  •     1 cup flour
Topping:
  •     8 oz semi sweet chocolate
  •     2 cups strawberries, halved
  •     4 tablespoons heavy cream

Instructions

  1. Preheat oven to 350F.
  2. Butter a 8X8 inch square pan, line it with baking paper and put aside.
  3. Melt butter in a saucepan. Remove from the heat and add in chocolate chips when it’s still hot. Mix until smooth.
  4. Add in sugar and mix.
  5. Add in eggs, one at a time and mix well.
  6. Pour the chocolate mixture into the bowl. Mix until combined.
  7. Sift in flour and salt. Using a spatula, stir until combined.
  8. Pour the batter into the prepared pan and bake for 30-35 minutes. Let it cool completely.
  9. When it cools completely, slice the strawberries in halves and place them on top of the brownie. Put the sliced parts down on the brownie.
  10. Heat heavy cream in a bowl over simmering water, add in chocolate chips and let it melt. Whisk it occasionally until smooth. Bring it to room temperature.
  11. Pour it over strawberries. Let it cool in the refrigerator for about 30 minutes or until the ganache is set.
