It’s so easy to make and feeds a crowd.
When summer is in full swing . . . we have the hot temperatures going on, swimming lessons, fireworks, and many family BBQ’s. We love every minute of it! I would much rather have a hot summer than a freezing cold winter!

We had a fun get-together for the 4th of July and I was planning on making my mom’s Raspberry Pretzel Salad, but I completely forgot to buy raspberries at the store. I started looking for something that I could use in place of it and I saw some cans of mandarin oranges in my pantry . . . the rest is history! It turned out awesome!

It’s so easy to swap out the jello and fruit for another flavor. So we have this salad in raspberry and orange flavor.

Mandarin Orange Pretzel Salad Recipe

Made a delicious dessert and one she can eat with us.

Ingredients

Crust
  •     2 1/2 cups finely crushed pretzels
  •     3/4 cup unsalted butter , melted
  •     3 tablespoons granulated sugar
Filling
  •     8 ounces cream cheese , softened
  •     8 ounces whipped topping , thawed
  •     1 cup granulated sugar
Topping
  •     10 ounce can DOLE Mandarin Oranges, drained, juice reserved and chilled
  •     3 ounce box orange gelatin

Directions

  1. Preheat oven to 350 degrees F. Coat a 9x13 baking dish with nonstick spray.
  2. In a medium bowl, mix together the pretzels, sugar, and melted butter. Press evenly into the bottom of the prepared baking dish.
  3. Bake for 10 minutes, or until mixture is lightly toasted. Set aside to cool completely.
  4. In a medium bowl, beat the cream cheese and sugar with a handheld mixer. Fold in the whipped topping until thoroughly combined. Spread evenly over the cooled pretzel layer, making sure it goes completely to the edges so the jello layer doesn't leak through. Refrigerate until set, about 30-40 minutes.
  5. Combine the reserved cold mandarin orange juice with enough cold water to equal 1 cup.
  6. In a medium bowl, whisk together the orange gelatin powder with 1 cup boiling water. Stir until completely dissolved. Then whisk in the reserved cold mandarin orange juice.
  7. Gently mix in the mandarin orange slices.
  8. Pour mixture over the cooled cream cheese layer.
  9. Refrigerate until completely chilled and set, at least 3 hours (or overnight).
  10. Slice and serve!
