Start by baking a layer of traditional chocolate brownies, then add a layer of cool and creamy strawberry filling, and top it off with a thin layer of melted chocolate for the final touch. Just like chocolate dipped strawberries, but better. Yes BETTER, because you get the same flavor but you also get a brownie. Nothing is better than fresh, soft baked brownies.

Chocolate Covered Strawberry Brownies

Chocolate Covered Strawberries are a Valentine’s Day classic. You get the beautiful, fresh red strawberries dipped in deliciously melted chocolate, and that crispy cool bite after setting them in the refrigerator. Now don’t get me wrong, those are SO GOOD. I love a good chocolate dipped strawberry. But you know what’s even better? That same amazing taste in the the form of a soft brownie.

This Chocolate Covered Strawberry Brownies recipe is the perfect mix of chocolate and strawberry, with a soft, fresh brownie later and a creamy strawberry layer. And you get that hard chocolate layer to top it off! I will definitely be serving these up next Valentine’s Day.

ingredients

  •     1/2 cup (1 stick) butter
  •     8 ounces semi-sweet chocolate, coarsely chopped
  •     1 teaspoon vanilla extract
  •     2 large eggs
  •     3/4 cup granulated sugar
  •     1/4 teaspoon salt
  •     1 tablespoon baking powder
  •     1/2 cup all-purpose flour
  •     8 ounces semi-sweet chocolate, coarsely chopped
  •     1 pound strawberries, sliced

directions

  1. Melt the chocolate into the butter in a sauce pan over medium heat and let cool.
  2. Mix the sugar into the eggs along with the vanilla extract.
  3. Sift the flour, baking powder and salt.
  4. Mix the melted chocolate into the egg mixture followed by the flour mixture.
  5. Pour the batter into a grease (optionally foil lined) 8 inch baking pan and bake in a preheated 350F/180C oven until a toothpick pushed into the centre comes out clean, about 20-25 minutes.
  6. Sprinkle the strawberries on top of the brownies.
  7. Melt the chocolate over medium-low heat on the stove or in a microwave, pour it over the strawberries and let cool until the chocolate is set, about 30-60 minutes.
