I just have to share my family’s recipe for classic cheesy broccoli rice casserole that I’ve been eating since as long as I can remember. It’s one of those side dishes that my grandma always made for holidays and family gatherings and that my mom would make as an easy side dish for a weeknight dinner.
It’s just downright delicious! Rice and broccoli are combined with a creamy cheese sauce then covered in more cheese and crushed potato chips before being baked to casserole heaven…
You could even add chopped chicken to it and call it a meal in itself. Otherwise, we serve it alongside some meat and a big green salad.
It’s one of those go-to casseroles that I know everyone will enjoy, especially my boys. They gobble it up like they’ve never been fed before and usually beg for seconds.

Loved it! So yummy! However I made it with fresh broccoli, so I put in the small raw florets halfway into the rice cooking process and then had to bring it back up to boil and it worked out just fine.

Ingredients
- 1 tablespoon oil
- 2 cups chicken broth
- 1 cup long-grain white rice
- 1 teaspoon garlic powder
- 1 1/3 cups grated cheese use the cheese your family loves...Cheddar, Monterey Jack etc...
- 2 cups broccoli or veggie of your choice, steamed and chopped roughly
- 2 tablespoons butter
- milk as needed to thin before serving if nessecary
- salt and pepper to taste
Instructions
- Place the oil in a medium size sauce pan over medium to low heat.
- Add the rice to the pan, cook and stir, until the rice starts to turn golden brown.
- Add the chicken broth to the pan, heat till it starts to boil. Place a lid on the pan.
- Cook, covered, for 15 - 20 minutes or until most of the chicken broth is absorbed.
- Remove from the heat and add the butter, chopped broccoli, cheese, and garlic powder. Stir until well incorporated. Cover and let sit for 5 minutes.
- Stir again and add salt and pepper to taste ,add milk if desired to get the consistency you want.
