When I was a little girl I always wanted “the cake with the colorful sprinkles” for my birthday!  I always thought my mom was such a great baker because she managed to get the inside of the cake so colorful Now, don’t get me wrong, my mom is an amazing baker. I just didn’t realize the base of that delicious birthday cake was a cake mix.  You can certainly make your own sprinkle funfetti cake with your favorite homemade white cake recipe and add sprinkles, but for these funfetti cake mix cookies we used a cake mix. 

I love how soft these cookies are and the sprinkles add a fun pop of color!  These funfetti cake mix cookies are perfect for kids, parties, St. Patrick’s Day and summer time!  We love sprinkles so much we have a fun no-bake butterscotch sprinkle recipe too!

We like to make our funfetti cake mix cookies a few different ways.  We always add a couple tablespoons of extra sprinkles to the batter, but that is just a personal preference.  We love to roll our cookies in rainbow circle sprinkles, also known as nonpareils.  We also like to just sprinkle a few extra rainbow jimmies on the top of some cookies.  You don’t even have to add extra sprinkles to the cookies…the sprinkles in the batter stand out all on their own too!

I used Pillsbury Funfetti Cake Mix but you could even use their white or chocolate cake mix and just add sprinkles to the batter. Any cake mix will do, just follow the recipe to make delicious cookies!

Funfetti Cake Mix Cookies


Prep Time 5 minutes
Cook Time 12 minutes
Chilling time 30 minutes
Total Time 47 minutes

Ingredients

  •     1 (15.25 ounce) box funfetti cake mix
  •     2 eggs
  •     1/2 cup vegetable oil (e.g. canola)
  •     Rainbow sprinkles (optional)

Instructions

  1. Add the funfetti cake mix, vegetable oil, eggs, and rainbow sprinkles (if using extra ones) to a large mixing bowl. Using an electric hand mixer, mix until combined.
  2. Chill for 30 minutes. I recommend this step since the dough is sticky and you will also get slightly puffier cookies with chilling, but you don't have to chill them. I didn't chill the cookies in the photos for the full 30 minutes.
  3. Meanwhile, preheat your oven to 350F. Line a baking sheet with parchment paper or a Silpat non-stick mat.
  4. Make 2" balls and place them on the baking sheet at least 2" apart, if not more since they do spread. Bake for 11-13 minutes until they're set.
  5. Let them cool for a few minutes on the baking sheet, then transfer to a cooling rack. Once cooled, store cookies in an airtight container.
