Ingredients
- 8 oz bag arugula
- 1/4 cup feta cheese
- 2 cups chopped watermelon
- 1 small red onion, thinly sliced
- 1/4 cup toasted walnuts
- 2 sprigs of mint, minced
Vinaigrette
- 3 tablespoons olive oil
- Large pinch of salt
- 2 tablespoons red wine vinegar
- Freshly ground black pepper, to taste
Instructions
- Whisk together vinaigrette ingredients in large serving bowl.
- Add salad ingredients to vinaigrette, then gently toss to combine
