Watermelon Arugula Salad – an explosion of sweet, salty, nutty, and peppery flavor in every bite!
Monday, Monday… so we meet again! I’m actually alright with Monday – it’s more those middle of the week days (Wednesday, Thursday) that aren’t quite my friend. Usually when Monday hits, I’m all ready to get back to work, but after 2 days I realize I was crazy and had no idea what I was thinking. It seems like the hours just draaaaaag by once you make it to Wednesday afternoon and then you still have to do the whole Thursday/Friday thing. I love working from home most days, but when I start losing motivation it would be nice to have some co-workers to give me a kick in the pants to keep going. If only I could train the cats to do something like that…
Have you ever had this magical salad? Or something like it? If you know my food preferences at all, you’ll know that I don’t completely LOVE vegetables, but I do eat them because I know I should. Most salads fit into that category. Like, I know I should be gnawing on these crunchy green things like a rabbit, but it’ll be fine if I just have a slice of pizza instead, right? That’s how I feel about most salads, but this one is a different story!
We almost always have a big bowl of watermelon in the fridge during the summer, and I love thinking of different ways to eat it. This weekend I made a minty watermelon sorbet as well as this peppery arugula salad with mint, walnuts, watermelon, and feta! Talk about refreshing!
This would be really tasty with any kind of melon, but the watermelon works especially well because the sweet juices mix with the other flavors so well to balance it out perfectly. And, one can never have enough watermelon, right?

Watermelon Arugula Salad

Ingredients
- 8 cups arugula
- 3 cups strawberries sliced
- 3 cups seedless watermelon portioned with a melon baller or chopped into 1/2 inch pieces
- 1/4 red onion thinly sliced
- 1/4 cup sliced almonds
- 1/2 cup crumbled feta cheese or more to taste
- 1/2 cup fresh basil chiffonade (optional)
- 1/3 cup fruity extra virgin olive oil
- 1 teaspoon sugar or honey, plus more to taste
- 1 1/2 tablespoons balsamic vinegar
- 1/4 teaspoon each kosher salt and freshly ground peppe
Instructions
- In a large bowl, add the arugula, watermelon, strawberries, red onion, basil, feta cheese, and almonds.
- in a small bowl whisk the olive oil, balsamic vinegar, sugar or honey, and salt and pepper. Taste for sweetness and add more honey or sugar to your taste. Drizzle half of the dressing over the salad ingredients, reserving the rest and adding more if desired, then gently toss. Taste for seasoning and serve.
