I recreated this Panna Cotta after trying it in the Papa Haydn restaurant. It was love with the first spoonful, but my frugal self didn’t like paying $8/ serving. I could make 6 servings for that price tag at home! I actually like this homemade version more with the fresh berry sauce.

What is Panna Cotta?
Panna Cotta is a creamy Italian jello/pudding like dessert. It has an incredibly smooth, melt-in-your-mouth texture like nothing else. The name means “cooked cream.” It is often served in restaurants removed from it’s cup onto a plate, but we prefer it served in cups topped with berry sauce.

Is this a Make-Ahead Dessert?

YES! Panna Cotta can be made in advance so it is perfect for entertaining! Serve it in wine glasses at your next dinner party, or in tiny shot glasses for a larger gathering (think: baby shower, bridal shower, church potluck, etc.).

Add the berry sauce and garnish with basil if desired just before serving.

Panna Cotta Recipe

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

INGREDIENTS

  • 3 cups buttermilk - (see below for substitute)
  • 5 tablespoons water
  • 2 packs gelatin
  • 1 cup all-purpose cream - - or heavy cream
  • 1/8 teaspoon shredded lemon rind
  • 1/2 cup sugar
  • 1 cup strawberries - - sliced thinly
  • 1 teaspoon vanilla extract

INSTRUCTIONS

  1. Dissolve gelatin in 5 Tbsp water and set aside.
  2. In a small saucepan, combine cream, sugar and lemon rind. Place saucepan on low heat and stir until sugar is completely dissolved.
  3. Once it starts to simmer, add the gelatin and stir for another minute or until all traces of gelatin are gone.
  4. Add the buttermilk and vanilla then remove the pan from heat.
  5. While the panna cotta is cooling down,prepare the rings. Cover the bottom part of the ring with a plastic wrap and place a rubber band around the ring on top of the plastic wrap to keep it in place. This makes sure that the liquid mixture will not seep out of the rings while they set.
  6. Line slices of strawberries on the inner walls of the rings. Place the rings on a flat tray.
  7. Once the mixture has cooled completely, pour it slowly onto the rings, filling a third of each rings. Place the tray in the fridge (or freezer) so it could set faster about 3-5 minutes. This is to make sure that the strawberry slices are in place and will not float in the surface once you fill the rest of the rings with the mixture.
  8. Once all rings are filled place them again in the fridge/ freezer and let it set. Remove them from the rings by running a warm knife along the sides. Serve chilled.
