It’s back-to-school week around here, and our mornings are once again a frenzied flurry of activity as my family rushes around getting ready for the day. To ensure that breakfast doesn’t get lost in the shuffle, I like to blend up a family-sized batch of our favorite smoothies so that everyone is able to grab a healthy breakfast on-the-go. This blueberry muffin smoothie tastes just like my boys’ favorite baked good, and it’s loaded with healthy ingredients – perfect for back-to-school or anytime!
I picked up my blueberry muffin smoothie ingredients at the Save-A-Lot store in Coalinga, and I was really impressed with their large selection of great foods at low prices (and their staff was super friendly and helpful, too!)! Ingredients:
- 1 cup frozen blueberries
- 1/3 cup milk (I used almond milk)
- 1/2 cup plain non-fat Greek yogurt
- 1/4 teaspoon vanilla extract, store-bought or homemade
- 1/4 cup old-fashioned oats (use gluten-free oats if making this smoothie GF)
- pinch of salt
- (optional) 1-2 teaspoons maple syrup or honey, to sweeten
Directions:
Add all ingredients to a blender. Pulse until smooth, adding more milk if needed to thin out the smoothie.
