Meatballs in the Instant Pot are THE way to go when it comes to meatballs. They really couldn’t be easier! When cooking meatballs in a pan they can crumble and fall apart. Baking them can dry them out. Cooking them in the Instant Pot is easier AND tastes better. By cooking them in the sauce the meaty flavor infuses the sauce and makes it so much more flavorful. Instant Pot Meatballs can be shaped, thrown in and cooked without falling apart AT ALL. The meatballs stay tightly packed and don’t crumble in the sauce!

Cooking the Meatballs in the Instant Pot

See? Uncooked! Crazy right? The first time I made these, I was a little worried. I thought that the meatballs wouldn’t keep their shape and I would end up having meat sauce, which happens to me more than I would care to admit when I am making meatballs in a skillet. I don’t know why they don’t fall apart in the Instant Pot. It’s like magic. I also need to mention that this will work great in ANY kind of pressure cooker. No matter what you use, you will get the same results.

Prep Time: 10 minutes
Cook Time: 7 minutes
Pressure Time: 15 minutes
Total Time: 15 minutes

Ingredients

For Meatballs
  • 1 pound ground beef
  • 1/4 cup beef stock
  • 2 tablespoons freshly grated Parmesan Cheese
  • 1/3 cup bread crumbs
  • 1 egg
  • 1 1/2 teaspoon salt
  • 1/2 tablespoon minced garlic
  • pinch red pepper flakes
  • 3/4 teaspoon pepper
  • 2 tablespoons fresh chopped parsley
For Cooking Meatballs in Pressure Cooker
  •     1 cup beef stock or water

Instructions

Prepare Meatballs
  1. In a large bowl, mix together the bread crumbs, seasonings, Parmesan, beef stock and egg until well incorporated.
  2. Add in the ground meat and mix until just combined. Do not over mix or you will have tough meatballs.
  3. Roll meatballs into 1 inch balls. Place on cookie sheet.
  4. At this point, you can freeze meatballs for 10 minutes to make them easier to handle, or you can pressure cook meatballs right away.
Pressure Cook Meatballs
  1. Pour in 1 cup beef stock into pressure cooker. Add in trivet to inner pot of pressure cooker.
  2. Gently, place prepared meatballs onto trivet, stacking as needed.
  3. Place lid on pressure cooker and be sure vent knob is pointed to sealed.
  4. Cook on high pressure for 7 minutes.
  5. Let pressure release naturally for at least 5 minutes before releasing pressure manually.
